Cut-out biscuits

This is a great recipe for a plain biscuit dough to roll out and cut with biscuit cutters. They aren’t very sweet so when you ice and decorate them they aren’t overpoweringly sugary. Add more sugar if you want to eat them uniced. Or choose the Gingerbread People recipe below.

Jewel Biscuits

Method:
Sift flour into a bowl and rub in the butter until the mixture resembles breadcrumbs. Stir in the sugar and enough beaten egg to mix into a firm dough.

Turn onto floured surface and knead till smooth. Roll out thinly and cut into shapes.

Place on a baking tray and bake in a preheated moderate oven 180oC for 12-15 mins. Cool on the tray.

Icing
Place icing sugar ina mixing bowl and gradually add milk/water until the icing coats the back of a spoon thickly. Divide icing into portions and colour as desired.

Spread icing over biscuits and add decorations as desired.

Biscuit Dough
1/2 cup plain flour
30g (1 oz) butter
2 tablespoons caster sugar
1 beaten egg

Icing
1/3 cup icing sugar
1-2 teaspoons milk or warm water
selection of food colouring

To Decorate:
Sprinkles, 100s & 1,000s, jelly beans, smarties, silver balls, jubes, etc

Gingerbread Biscuits

Biscuit Dough
1cup plain flour
1/2 teaspoons bicarb soda
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
30g (1 oz) butter
2 teaspoons golden syrup
1 teaspoon milk
1/3 cup stiff glace icing

Method:
Sift flour, soda and spices into a bowl. Place the fat, sugar and syrup in a pan over low heat until melted. Cool, then mix into the flour with the milk to make a firm dough.

Turn onto floured surface and knead till smooth. Roll out thinly and cut into shapes.

Place on a baking tray and bake in a preheated moderate oven 180oC for 12-15 mins.
Cool on the tray.
