Baked Potato Skins
Ingredients
4 medium potatoes
1/2 cup grated cheese
3 tablespoons bacon pieces (optional)
seasoning to taste
Method
Scrub potatoes and pierce each with a fork. Bake in a preheated hot oven until soft; about 1 hour (you can also cook them in a microwave to make it quicker).

Cut potatoes in half lengthwise and scoop out centers, leaving a 1cm shell. (Reserve removed potato for another use.) Cut  potato halves lengthwise. Brush potato shells with melted butter, then  place on a large baking sheet. Bake in a preheated hot oven for 15-20  minutes, until brown and crisp. Sprinkle evenly with cheese, bacon bits and seasoning. Return to oven for 3 minutes longer to melt cheese.  Serves 6.
