Salmon Patties

This is nice as crumbed patties, or a mash with vegetables. Just add more milk to make it a bit smoother and softer.
Flavour is best when served immediately, as the taste becomes “fishier” as it gets cold or is stored overnight. |

Ingredients 1 onion, chopped 210g can pink salmon, (large bones mashed well or removed) 3 medium potatoes, cooked and mashed
squeeze lemon juice 2 tablespoons milk, or lemon-pepper mayonaise 1 cup stuffing mix or fresh breadcrumbs herbs and seasoning to taste - fresh dill is yummy |

Method Heat a little oil in a frypan and cook onion. Combine with potato, salmon, milk and seasoning/herbs. When
mixture is cold, divide into patties and roll in breadcrumbs and rest for 30 minutes, covered in the refrigerator. Fry patties till golden on both sides. |
